A few years ago our local grocery store started selling the most delicious pumpkin chocolate chip cookies in the bakery. Karen and I fell in love with these cookies but the store didn't always have them. Ever since discovering those cookies, I try pumpkin chocolate chip everything. I hate pumpkin pie but I love pumkin bread and those cookies were a good surprise. Certainly given our luck those cookies would be discontinued, so I started hunting for a recipe. I found a winner! I made a few slight changes to the original recipe which I am posting below. I will note my changes at the end (the links also go to the original recipe and I can't find whoever originally posted it online to profess my undying love).
Iced Pumpkin Cookies
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 1/2 cups white sugar
- 1 cup canned pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar
- 3 tablespoons milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
- In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
- Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
- To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.
The changes I made: Instead of nutmeg, I used 1/2 teaspoon of allspice. I added one bag of semi-sweet chocolate chips. I don't think they need icing unless you are taking them to a party or something because they are not the most attractive cookies (I put another photo here). I used a simple powdered sugar and water glaze on some just to see how it was and those were good, too. They are more of a cakey cookie and if you are not bothered by too much richness, a cream cheese frosting between two of these babies might be a really heavenly treat.
