In an attempt to soothe my PMS while procrastinating, I decided to make cakepops (minus the dumb stick) after reading that Starbucks got the idea from Bakerella. Since I am also dieting and also too lazy to put my bra back on, I wanted to use what I had instead of going to the store. I frequently make diet soda cake and had a yellow cake mix and diet root beer. I also had a can of buttercream frosting and a bag of white chocolate chips. There, I can stick to the diet and not leave the house. Perfect. I have never made a yellow cake with diet root beer before but I make chocolate with root beer all the time and it's great! So good with Cool Whip, try it! A delish chemical treat for dieters or people without eggs and oil at home.
The gist of the cake pop recipe is you bake your cake, when it is cool make it into crumbs, then mix it with a thing of frosting. Roll the dough into balls then dip in melted chocolate. Easy and a total time waster. I mixed up my cake and while it baked I discussed the dresses and hats at the royal wedding with my friends on facebook. It's not that I cared too much about the wedding but I do love looking at dresses and hats. And I had to know if Princess Diana's brother was gonna beat anyone up during the ceremony. And I am procrastinating. Thirty-five minutes later my cake was done and as it cooled,I could not help but think it looked a lot like corn bread. I checked the box again and it was for sure yellow cake. It cooled and I started to crumble the cake and of course, the thing of frosting was open and the cook has to be sure nothing is poisoned.
Apparently, diet root beer turns yellow cake mix into cornbread. Corn bread mixed with buttercream frosting is too gross for words. It's odd because corn bread with sweet cream butter is scrumptious! There was no way I was going to waste my entire bag of white chocolate chips on this. So, I made 6 balls (and tossed the rest) and melted a handful of chocolate just to see how cornbread balls dipped in white chocolate taste. I had some toffee bits so I threw caution to the wind and sprinkled those on, too. I did a very sloppy job of it and had already moved on to eating a spoonful of peanut butter. I made blobs instead of balls.
I popped the blobs in the fridge to set. When I was done with the peanut butter binge, I was ready to try the toffee cornbread blobs. While they still had a cornbreadiness about them, I could tell they would've been good if the cake had been cake and not cornbread. Or if the frosting had been sour cream and the toffee had been jalapenos and the cornbread was still cornbread.
So, now we know. Don't mix diet root beer with yellow cake mix if you want cake. I'll be at Starbucks first thing in the morning to order a real cake pop. I won't even mind about the stick.
*Diet 7-Up is probably fine with yellow cake, it's good with Lemon.
